Franchising a café in Morocco: an example
Illustrative scenario, not a client case: imagine an independent café in Casablanca whose owner wants to open further outlets with partners. The situation, steps and decisions below explain a method. No revenue result or franchise opening is presented as an achievement by Chorakae or a client.
1. Test whether the existing concept works
Before recruiting franchisees, the owner gathers sales and cost records, menus, recipes, customer feedback and service complaints. The team separates results driven by the location, the owner’s personal work or one supplier. If available records cannot explain margins, the first job is to improve measurement.
2. Make operations repeatable
The team documents purchasing, preparation, hygiene, service, recruitment and quality checks. A manager who did not create the café tests the procedures. Gaps are used to revise instructions and estimate the resources needed. A manual alone does not show that a second outlet will make a profit.
3. Build the prospective operator’s budget
The project separates premises, fit-out, equipment, stock and opening costs from recurring expenses. Each assumption has a date and source. Network fees and support should be discussed together: a candidate needs to understand what is paid for, what is supplied and which risks remain with the operator. This example implies no universal investment figure.
4. Review brand rights and obligations
The owner asks appropriate advisers to check brand rights and the assets to be shared. They prepare proposed terms for training, sourcing, territory, quality control and exit. An expansion intention should not be described as an established network. Candidates should have time to ask questions and examine relevant documents before committing.
5. Test before wider expansion
A pilot outlet can reveal whether procedures, staffing and unit economics work outside the original site. The project tracks sales, margins, complaints and the support required. If results differ from assumptions, the model should be revised before further openings are proposed. Network growth remains uncertain.
